Dave’s Pumpkin Pie


This recipe will make two pumpkin pies.

Ingredients

The Pie

  • 3/4 cup sugar
  • 1 1/2 tsp ground cinamon
  • 1/2 tsp ground ginger
  • 1/4 tsp salt
  • 1/4 tsp ground nutmeg
  • 15 ounce can of pumpkin
  • 1 egg
  • 3 egg whites
  • 2 frozen pie shells

The Topping

  • 10 gingersnap cookies
  • 2 Tbsp sugar
  • 1 Tbsp all purpose flour
  • 2 Tbsp butter, cut into small cubes

Instructions

  1. Combine pie ingredients and bake at 350 for 35 minutes.
  2. While the pie is baking, make the topping for the pie.
    • Add cookies, sugar, and flour to a food processor. Blend well.
    • Add butter and pulse slightly until crumbly.
  3. Sprinkle crumb mixture topping onto the pie and bake an additional 20 minutes.
  4. Let pie cool for at least one hour.
