This recipe will make two pumpkin pies.
Ingredients
The Pie
- 3/4 cup sugar
- 1 1/2 tsp ground cinamon
- 1/2 tsp ground ginger
- 1/4 tsp salt
- 1/4 tsp ground nutmeg
- 15 ounce can of pumpkin
- 1 egg
- 3 egg whites
- 2 frozen pie shells
The Topping
- 10 gingersnap cookies
- 2 Tbsp sugar
- 1 Tbsp all purpose flour
- 2 Tbsp butter, cut into small cubes
Instructions
- Combine pie ingredients and bake at 350 for 35 minutes.
- While the pie is baking, make the topping for the pie.
- Add cookies, sugar, and flour to a food processor. Blend well.
- Add butter and pulse slightly until crumbly.
- Sprinkle crumb mixture topping onto the pie and bake an additional 20 minutes.
- Let pie cool for at least one hour.
